Maximizing the Success of Product Innovation Through Digitally Enabled Food Product Design

Food innovation typically begins with what is available or observable: a new ingredient, an emerging technology, a consumer trend or something people say they want. The product is developed, and only later do we ask how consumers feel about it.

But what if the process started somewhere deeper—with an unmet human emotion?

At IFT FIRST 2024 in Chicago, Dr. Constantinos Pantidos and Maria Velissariou explored how digitally enabled food product design could reverse the traditional innovation process. Drawing on biology and the science of human behaviour, the approach begins by identifying fundamental human motives and emotional territories that are not adequately satisfied by existing products—revealing opportunities that consumers themselves may not be able to consciously articulate.

This is where THE WHEEL OF MOTIVES® changes the role of emotion in innovation. Rather than treating emotion as something to measure after development, the framework gives it structure so that an unmet human motive can become the basis for innovation strategy and positioning. The question shifts from What new product could we make? to What human need could we satisfy in a way that no existing product does?

Once that territory is identified, the same emotional logic can travel downstream into what actually gets created. Concept, ingredients, formulation, flavor, texture, appearance, packaging and communication can all be orchestrated around the same underlying motive, creating one coherent and immersive emotional experience.

Emotion therefore stops being an additional benefit layered onto functional USPs. It becomes an organizing principle for the product itself.

The ambition is to move food innovation from tasty, nutritious and healthy to flavor fused with emotion—and from experimentation, trial and error and personal preference toward selecting each element with greater scientific precision and confidence.

The presentation brought this innovation logic to life through Sauce It Up, a case developed for a food ingredient company. Instead of starting with another sauce concept and searching for a differentiating story afterwards, the methodology began with human motivation. A motivational territory informed the concept and positioning, which could then be translated into the recipe, ingredients, flavor, texture, sensory properties, packaging and wider brand experience.

Sauce It Up demonstrated the complete journey that THE WHEEL OF MOTIVES® makes possible: from understanding an unmet human emotion, to turning it into a strategic opportunity, to designing that emotion into something people can actually taste, see and experience.

The fundamental shift is simple:

Don't create a product and then search for the emotion.
Start with the emotion—and build the product around it.

A new model of food innovation where human desirability becomes an input to strategy and product design, not simply an outcome to be measured.
