How Consumer Behavior Shapes Brand Desirability
Institute of Food Technology (IFT) British Section
Emotions drive choice, yet businesses still struggle to operationalize them. Managers spend enormous time optimizing what consumers can rationally evaluate—USPs, recipes, claims, features and pricing—while many of the deeper forces shaping desirability operate before conscious reasoning and are difficult for consumers themselves to articulate.
In this presentation to the British food science community, Dr. Constantinos Pantidos, Founder of BRAND AVIATORS® and creator of THE WHEEL OF MOTIVES®, explored how biology and the science of human behaviour can bridge this gap between what people feel and what businesses actually create.
For decades, marketers have recognized that emotions matter. The difficulty has been turning them into action. We may decide that a brand or product should feel reassuring, playful, transformative or desirable—but how should that emotional intention influence the actual ingredient, texture, flavor, packaging, message or sensory experience?
Conventional approaches can easily separate the functional product from its emotional meaning: develop the formulation, packaging and communication, and then measure or rationalize consumers' emotional responses afterwards. The presentation proposed a different principle: emotion is not separate from the physical product. Every ingredient and sensory signal is processed by the nervous system and contributes to the meaning and experience the brain constructs.
Drawing on biology and affective neuroscience, THE WHEEL OF MOTIVES® gives these emotional forces structure, mapping fundamental human motives and connecting them with the tangible signals capable of expressing them.
The framework was therefore presented as an emotion–function converter: a way of moving from an intended human motive to the ingredients, textures, flavors, forms, materials, packaging and communication capable of bringing that emotion to life.
This changes the role of emotion in product and brand development. Instead of designing the functional product first and adding an emotional story later, the desired human motive can become an input into what gets formulated, designed and communicated from the beginning.
The presentation captures a principle at the heart of the BRAND AVIATORS® approach: biology gives emotion structure, THE WHEEL OF MOTIVES® maps the deeper forces behind choice, and that understanding can then be translated into products, sensory experiences, packaging and brand expression.
The objective is not simply to tell consumers what the brand represents.
It is to make them feel the brand—physically, neurologically and emotionally.
Because desirability emerges when the signals we create resonate with patterns the human brain already knows how to recognize.
